Standing out with its unique cuisine and delicious dishes, Diyarbakır's registered liver kebab remains a staple for citizens at iftar time. Consumed at the grill, the liver leaves an unforgettable pleasure on the palates of those who eat it.

Liver Master Onur Erdin stated that liver kebab is one of Diyarbakır's indispensable delicacies during the month of Ramadan as well.
Expressing that they sell approximately 500 kilograms of liver per day during Ramadan and that their occupancy rate is 100 percent, Erdin said, "During Ramadan, we start our preparations about half an hour before iftar. When one thinks of Diyarbakır, liver naturally comes to mind. Liver is also an indispensable dish on our tables during the month of Ramadan. Many people make reservations at our workplace for iftar. Those accustomed to the taste of liver do not give it up during Ramadan. In addition, there is also high demand for grilled varieties. We sell nearly 500 kilograms of liver alone per day. Home delivery is quite rare because most citizens want to taste that flavor at the grill. Also, liver needs to be eaten while it is hot," he said.

Sevgi Yalçın, one of the citizens who wanted to break their fast with liver kebab, noted the following:
"We made a reservation in advance to break our fast with our registered liver. Eating liver at the grill is, of course, more enjoyable. Especially that smell of liver stimulates the appetite. If we combine our liver with peppers, it becomes even more authentic."
