46-year-old Hülya Elma, who lives in the Çubuk district of Ankara, learned how to make tandır pastry from her mother-in-law years ago.

In order to keep this traditional flavor alive and earn an income, Elma opened a pastry shop in Cumhuriyet Neighborhood in 2022.

Elma's pastries attracted great interest in a short time, and in the face of increasing demand, she began employing 20 women in shifts at her business. She prepares her pastries with minced meat, cheese, and potato varieties, baking them according to orders received from different districts of Ankara and delivering them to her customers.

THE PREPARATION PROCESS OF TANDIR PASTRY

Hülya Elma stated that tandır pastry is a very popular flavor in the Çubuk district. Explaining the stages of making the pastry, Elma said, 'Two layers of thin phyllo dough are rolled out, the space between them is greased and folded into a roll, then cut and pressed upright. Depending on preference, minced meat, potatoes, cheese, onions, parsley, and spices are added inside. Yogurt is spread on top and it is cooked over low heat for hours.'

She also added that the pastry, which was cooked in a tandır (clay oven) in the past, is now generally prepared in stone or electric ovens.

50-year-old Havva Sağlam, who works at the business, stated that making the pastry is laborious and that she learned this recipe from her mother and grandmother. 45-year-old Elife Üce stated that she carefully bakes this local delicacy, which she learned from her mother.
