Dessert makers have intensified their work for the New Year due to orders received from both within the city and many regions outside the city for burma kadayıf, one of the city's registered delicacies. The geographically indicated pistachio and walnut burma kadayıf became the popular dessert of 2023.
Ahmet Altunbay, the operator of the famous Kadayıfcı Sıtkı Usta, which has been serving in Diyarbakır since 1968, stated that they have recovered their dessert sales following the earthquake process.
“Target is 2 tons”
Stating that their target for the amount of dessert to be sold throughout the day on New Year's Eve is 2 tons, Altunbay said, “As Sıtkı Usta, we have been in the dessert business since 1968. We will hopefully leave 2023 behind on Monday. Our orders have increased significantly for New Year's Eve. We have over a ton of orders, and orders continue to come in. Our target is 2 tons. It is passing like the eve of a holiday. The earthquake that occurred this year was unfortunately very bad. During the earthquake process, all our branches were closed for the first month. Thank God, there has been a recovery after the earthquake. Now our business is better.”
Altunbay added, “Among our dessert varieties, our geographically indicated walnut burma kadayıf has been the most popular. Our prices have doubled in 2023 compared to previous years. Despite this, we did not raise our prices too much. We will not raise prices in 2024 unless we are forced to. Currently, pistachio kadayıf is 400 TL, and walnut kadayıf is 300 TL.”
