Tarhana soup recipe
Tarhana soup is one of the most beloved and nutritious delicacies of traditional Turkish cuisine, and it is quite easy to make. So, how do you make tarhana soup?

4 tablespoons powdered tarhana
1 tablespoon dried mint
7 cups water
1 tablespoon sunflower oil
1 tablespoon butter
1 tablespoon tomato paste
1 teaspoon salt
1 clove garlic (crushed)
Place the powdered tarhana in a large mixing bowl. Add the dried mint and 2 cups of room-temperature water, and mix using a whisk. Let it soften at room temperature for about 15 minutes until the tarhana is soft.
Meanwhile, add the vegetable oil and butter to a large pot and begin melting them over medium heat. Add the crushed garlic and tomato paste, and begin to sauté.
Add the softened tarhana mixture, then add the salt and stir.
Add the remaining 5 glasses of water to the pot. Cook, stirring occasionally, until it thickens.
Serve the boiling soup hot without waiting. Since it is a soup that thickens as it cooks, we recommend adding water if you are going to consume it later.
