Panzanella, consumed in Italy and other European countries, is an Italian salad made from stale, moistened bread pieces mixed with tomatoes, onions, or basil, and dressed with vinegar and olive oil.
PANZANELLA INGREDIENTS:
450 g stale homemade bread
3 tomatoes, not overly ripe
2 red onions
1 cucumber (optional)
1 bunch of basil
Extra virgin olive oil
Wine vinegar
Salt and pepper
HOW TO MAKE PANZANELLA?
-After cutting the stale bread into cubes, lightly toast them in a dry pan.
-In a large mixing bowl, mix the balsamic vinegar, olive oil, and salt thoroughly, then add the toasted bread to this sauce to soften.
-Sauté the cherry tomatoes in a pan just enough to keep them firm, then set aside.
-In the same pan, sauté the bell peppers until browned. If you wish, clean the stems and chop them into large pieces.
-Add the sautéed tomatoes and peppers to the bowl with the bread.
-Add the halved mozzarella cheese, finely chopped onion, fresh thyme, and basil on top, and mix well.
-Serve the prepared Panzanella salad in a large, attractive serving bowl.
