Yayla soup, or yogurt soup, is a soup whose most important ingredient is yogurt. It is prepared and consumed in every region of Turkey.
Yayla soup is known to have cholesterol-balancing properties and is also believed to facilitate fat burning.
YAYLA SOUP INGREDIENTS
- 1 cup rice (Turkish coffee cup)
- 7 glasses of water
- 1 glass of yogurt
- 1 egg
- A little more than half a cup of flour (Turkish coffee cup)
- 3 tablespoons vegetable oil
- 2 tablespoons butter
- Salt
- Dried mint
HOW TO MAKE YAYLA SOUP
- Add water, vegetable oil, salt, and rice to a pot. Boil until the rice is soft.
- In a separate bowl, whisk the yogurt, egg, and flour well with nearly 1 glass of water.
- Once the rice is soft, add the yogurt mixture to the soup while stirring quickly. Stir until it boils. Once it boils, simmer on low heat for 10-15 minutes. Do not forget to stir occasionally.
- After the soup is cooked, turn off the heat.
- For an elegant presentation:
- Ladle the soup into bowls. In a separate pan, heat the butter and mix with the dried mint. Drizzle this over the soup in the bowls. Add the remaining minty butter to the soup in the pot and stir.
