Nutritionist issues warning about pickles

Nutrition and Diet Specialist Dietitian Cemre Balkan touched upon the key points regarding the consumption of pickles.
'HOMEMADE PICKLES ARE PREFERABLE'
Stating that homemade pickles are more preferable than store-bought ones, Medicana International Samsun Hospital Nutrition and Diet Specialist Dietitian Cemre Balkan said, “Pickles, which are an important probiotic, are one of the fermented foods we consume the most, especially in winter. However, it is the homemade version of pickles that should be consumed in a controlled manner. The primary benefit of a pickle actually comes from the food it is made from. Cabbage, beets, and peppers are vegetables that protect against cancer thanks to their antioxidant properties.
Those who cannot consume these foods in their raw state can eat them more easily when pickled and benefit from their antioxidant properties. Fermented foods, including pickles, are known for their potential probiotic effects due to the presence of live microorganisms that can provide health benefits to the gut microbiota. Thanks to the lactic acid bacteria it contains, this fermented food exhibits protective properties against many diseases. Having a healthy gut flora is one of the fundamental factors underlying good health,” she said.
“Every vegetable and fruit can be pickled”
Expressing that every fruit and vegetable that comes to mind can be pickled, Cemre Balkan said, “Pickles play an important role for B-group vitamins such as vitamin K, thiamine, and riboflavin thanks to the beneficial bacteria they contain. While vitamin K is related to blood clotting, B-group vitamins are effective in strengthening the nervous system and memory. Almost every vegetable and fruit you can think of can be pickled. However, you need to choose products that are as natural and seasonal as possible.
It is essential to wash the ingredients you will use for pickling very well and, if possible, let them soak in water for a while. You should prefer clean drinking water rather than tap water containing chlorine, and for salt, you should stick to natural rock salt. Once jarred and the lid is tightly closed, it is sufficient to ensure it does not get air and is kept in a cool place,” she stated.

Touching upon the points to be considered in consumption, Balkan said, “Pickles included in a diet list help with weight loss thanks to their low calorie content. However, their high sodium level leads to water retention in the body after eating. This can affect the numbers on the scale. As with everything, too much of a good thing is harmful. Especially those with high blood pressure, kidney, diabetes, and stomach-related diseases must consult a physician or dietitian before consuming pickles.”
