Making kisir is one of those beloved flavors that finds its way into many homes with its practical recipe, though the taste varies from house to house. It is frequently preferred both because it is filling and because it can be served during tea time. Traditionally made by blending fine bulgur with various vegetables, this recipe is always among the favorites with its unique taste and texture. 

INGREDIENTS FOR 4-6 PEOPLE

2 onions

2-3 cloves of garlic

About 2 cups of fine bulgur

1 green pepper

2 tomatoes

Lemon

Pickles

Red pepper flakes

Mint

Thyme

Lettuce

Black pepper

Salt

PREPARATION

Finely chop the onions and garlic. Heat some olive oil in a pan. Sauté the onions and garlic. When the onions begin to soften, add the tomato paste and pepper paste and mix. Add 2.5 cups of hot water. Bring the sauce to a boil.

Place the bulgur in a bowl. Pour the boiling sauce over it and mix well. Cover the bowl and let it sit for 20-25 minutes.

Finely chop the green onions, parsley, mint leaves, green pepper, and pickles. Quarter the tomatoes, remove the seeded parts, and chop them into small pieces.

Pour the bulgur into a large dish. Add the chopped greens. Add the tomatoes. Sprinkle with salt, dried mint, thyme, and red pepper flakes. Add lemon juice and olive oil. Mix thoroughly from bottom to top.
