How to make Revani dessert?

Revani is one of the desserts in Turkish cuisine. It is a dessert invented by palace chefs in honor of the conquest of Armenia and Yerevan during the Ottoman period, and named 'Revani' due to the victory in Yerevan.

Revani dessert is referred to as sponge cake or yogurt dessert in some places. It is a syrup-soaked dessert.

REVANİ DESSERT INGREDIENTS

For the cake;

  • 3 eggs
  • 1 cup sugar
  • 1 cup yogurt
  • 1 cup semolina
  • 1 cup flour
  • 1 packet vanilla
  • 1 packet baking powder
  • 1 tea glass vegetable oil

For the syrup;

  • 3 cups water
  • 3 cups sugar
  • Half a lemon's juice

HOW TO PREPARE REVANİ DESSERT?

  • First, the syrup is prepared. For the syrup, sugar and water are placed in a pot and boiled. After it boils, half a lemon's juice is added, it is boiled for another 1-2 minutes, and the heat is turned off.
  • For the cake, eggs and sugar are placed in a mixing bowl and whisked thoroughly.
  • Then, vegetable oil, yogurt, and semolina are added and whisked.
  • Finally, flour, baking powder, and vanilla are added and whisked well.
  • The cake batter is poured into a greased baking dish.
  • It is baked in a 170-degree oven for approximately 30 minutes until the top is golden brown.
  • The cake, having lost its initial heat, is cut into slices, and the cooled syrup is poured over the hot cake.
  • After resting for 1-2 hours, it is decorated with whipped cream, coconut, or pistachios, etc., as desired, and served.
