SAN SEBASTIAN CHEESECAKE
Ingredients
3 containers of labneh cheese
2 small packages of heavy cream
4 eggs
1 cup granulated sugar
2 tablespoons flour
1 packet vanilla
1 tablespoon starch
Instructions
Place the eggs and sugar in a large mixing bowl. Using a mixer, beat for 5-6 minutes until the sugar is well dissolved. Add the labneh cheese to the same bowl and continue beating. Add the heavy cream, flour, starch, and vanilla, and beat until smooth. Line a 20 cm springform cake pan with parchment paper. Pour in the prepared cake batter and place it in the oven. Bake in a preheated oven set to 200 degrees for 20 minutes. It should be wobbly when you take it out of the oven. Once it reaches room temperature, place it in the refrigerator and let it rest for 1 day. Enjoy.
TIPS FOR PREPARING CHEESECAKE
Make sure all ingredients are at room temperature.
Be sure to set your oven to the fan setting. This will make the outside more charred and the inside more fluid and soft.
The baking time depends entirely on your oven; if you like it more charred, leave it in longer.
Do not remove it from the oven immediately after baking; let it sit with the oven door open.
