It gets its color and taste entirely from the ruby cocoa bean it is made from, which is why it is defined as the fourth type. WHAT IS RUBY CHOCOLATE AND HOW DID IT EMERGE?

It is a new type of chocolate produced from a different and special cocoa bean, also known as the ruby cocoa bean, which sets it apart from other chocolates in terms of both appearance and taste. The discovery of ruby was not a coincidence like other chocolates, but the result of 13 years of extensive research. The famous Zurich-based chocolate brand Barry Callebaut introduced this new type of chocolate, which they named ruby, in September 2017 after years of work. This type of chocolate, which has a pastel pink color, also manages to distinguish itself from other chocolate types in terms of taste. Ruby chocolate gets its unique natural color and flavor from unfermented Brazil Lavados cocoa beans.
