According to the free encyclopedia Wikipedia, during the September 12 period, a general complained to the military personnel stationed in Istanbul and the Mayor of Istanbul, İsmail Hakkı Akansel, about the high price of the baklava he had purchased, which led to the publication of a list regarding the upper limit of the retail price of baklava that year. However, since the determined price did not cover the cost of the baklava, the owners of Güllüoğlu Baklavaları sought a way to make a baklava at a cost that could be sold within the price ceiling; hazelnuts were used instead of pistachios, and milk was added to increase the weight of the dessert. Thus, a relatively low-cost baklava was made that could be sold at the price dictated by the coup authorities.
Regarding the name of the dessert, Nejat Güllü, the owner of Güllüoğlu Baklavaları and the inventor of the dessert, said: We wanted to give this dessert, which was low-cost but quite delicious, an interesting name that was not on the list created, and in the end, we decided on the name Sütlü Nuriye. People were very curious about where the name of this dessert came from, but this name had no meaning and no story. Our main goal was to make people love this dessert. According to Metin Güven, the owner of the Güven Tatlı business who participated in the Masterchef program, it was the invention and creation of a female employee from Diyarbakır who worked for his father, he said.
Sütlü Nuriye, prepared with milk, hazelnuts or almonds, and sugar, is also known as the coup baklava. This dessert, which is identified with Diyarbakır cuisine, is one of its indispensable flavors. Here is the Sütlü Nuriye recipe using ready-made baklava phyllo dough…
SÜTLÜ NURİYE WITH READY-MADE BAKLAVA PHYLLO
Ingredients
40 sheets of ready-made baklava phyllo dough
350 g butter
4 cups slivered hazelnuts or coarsely ground hazelnuts
For the syrup
3 cups milk
1.5 cups water
3 cups granulated sugar
Preparation
First, to prepare the syrup; add water, milk, and sugar to a pot and heat while stirring constantly until the sugar dissolves. Once the sugar has dissolved, remove from the heat. Do not boil the syrup. Grease the bottom of a baking tray with butter. Place a sheet of baklava phyllo dough in the tray and brush with butter. In this way, layer about 20 sheets of dough on top of each other, brushing each one with butter in between. Sprinkle all the hazelnuts over the dough, i.e., on the 20th layer. Layer the remaining 20 sheets of baklava dough in the same way, brushing each with butter in between. After placing all the dough in the tray, drizzle the remaining butter over the dessert. Trim any excess dough from the edges for a neater appearance. Slice the dessert into small squares. Bake in a preheated 180-degree oven until golden brown. After the initial heat of the dessert taken out of the oven has dissipated, pour the lukewarm syrup over the dessert. After it has completely absorbed the syrup, you can garnish it as you wish and serve. Enjoy your meal.
