The chef brothers, who adapt traditional Turkish dishes to be compatible with seafood, have now offered octopus doner to their customers following their success with sea bass skewers, simit-crusted sea bass, and tuna doner.
The Gezen brothers, who prepare the octopus by first keeping it in boiling water and then cooking it on a doner spit with a special butter sauce, achieved successful results from their experiment.
Stating that they went viral on social media, especially with the video they shot of the Dubai chocolate with anchovies, Chef Mehmet said, "We received very positive reactions and comments. We had previously made it to Turkey's agenda with our fish doner. Following that, we thought about what else we could do differently, and the idea of making octopus doner emerged. We have now implemented this and are serving it to our customers."
Stating that they use social media actively alongside their profession, Chef Mehmet continued his speech as follows:
"In the early days of social media, we only posted short videos or photos of the presentation or tasting parts of the dishes we made. Later, we realized that tasting videos were watched more, reached the explore page, received more interaction and comments, and brought in more followers than photos. Because of this, we preferred to move forward with more videos. Later, we developed this and started publishing videos by fitting them into one minute, not just with the tasting part, but with an introduction, development, and conclusion."
Stating that the positive feedback on the videos they shared is a source of inspiration for them, Chef Mehmet emphasized that social media has been effective in their success today.
Noting that they also worked in a doner shop in the past, Chef Mehmet said, "Naturally, we are two masters who also understand doner." Stating that he later switched to seafood and they decided to combine previous recipes with seafood, Chef Mehmet said, "We have many recipes such as fish kunefe, fish Adana, and fish lahmacun-pide. We are constantly researching 'What else can we do?' and then we turn this into a service and offer it to our customers, and we have received very good interactions and reactions to date."
Reminding that they made fish doner from tuna, Chef Mehmet stated that this dish was also very popular and they received positive feedback from customers. Explaining that they are constantly trying various recipes, Chef Mehmet said, "We are constantly researching 'What else can we do?'. We try it, we taste it ourselves first, and we have our customers taste it. We get very good reactions. This time, we brainstormed 'what can we do?' and Chef Faruk and I came up with the idea of 'octopus doner' and today we will present it to our customers."
Stating that customers are very surprised when they first hear about such dishes, Chef Mehmet said, "When they see the fish or octopus doner on the counter, they get excited to take a video and share it on social media. Naturally, they are also very excited to taste it; and they are very surprised after tasting it."
Customers who tried the octopus doner for the first time liked the taste of the doner very much.
