English bread: Stottie cake
The stottie cake is a soft, dense, and delicious bread from England, characterized by an indentation in the middle. So, how is a stottie cake made?
Stottie cake is traditionally consumed split open and filled with pease pudding, ham, or similar breakfast ingredients.
It is believed that the name of the bread is derived from a Geordie word meaning to bounce, referring to the fact that the bread would bounce if dropped.
STOTTIE CAKE RECIPE
- Ingredients for Stottie Cake / 1 piece
- 500 g bread flour
- 1 packet instant yeast (7 g)
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 325 ml warm water
- 1 tablespoon olive oil
HOW TO MAKE STOTTIE CAKE?
- Add the bread flour to a large mixing bowl. Create a well in the center.
- Add the instant yeast, salt, and granulated sugar into the well.
- Slowly add the warm water and olive oil, and knead by mixing all the ingredients. The dough needs to have an elastic consistency.
- Cover the dough with a damp cloth and let it rise at room temperature for 1-2 hours. During this time, the dough should double in size.
- Knead the risen dough lightly and shape it into a flat round. Then, draw a line on top of the dough with a bread knife.
- Lightly grease a baking tray and place the dough on the tray.
- Preheat the oven to 220 degrees. Place the dough in the oven and bake for 10 minutes.
- Then, lower the oven temperature to 190 degrees and bake the bread for another 20-25 minutes.
- Remove the bread from the oven and wait for it to cool completely.
