Cheddar is a very important type of cheese in terms of vitamins. Rich in vitamin A, Cheddar is particularly important for dental and bone health. With its antioxidant properties, it supports the regular functioning of the immune system.

HOW IS CHEDDAR CHEESE MADE?

Cheddar cheese is mostly made with cow's milk. Fresh milk obtained from special farms is pasteurized, and rennet is added to curdle the milk.

Once the curd forms, the whey is separated, and the curds are cut and pressed by stacking them in slabs. These slabs are turned regularly and compressed further to ensure the remaining whey is also separated.

After taking shape in the slabs, they are left to mature in vacuum packaging in cold storage. To reach its full flavor, it must mature for at least one year. If Cheddar cheese, which has a unique taste, is consumed before it is fully matured, it remains bland without reaching its true flavor.

'How is Cheddar cheese made?' is as important a question as another: 'What color should Cheddar cheese be?' As is known, Cheddar cheese can be both white and orange. During the cheese production stage, characteristics such as the cheese's smell, structure, and color are derived from the milk, which is its raw material. Many factors, from the breed of the animal the milk is obtained from to how it is fed, are effective in the structure of the milk.

Depending on these factors, the color of the milk can vary between white and yellow. To ensure consistency in the color of Cheddar cheese, producers began adding a coloring plant to the milk. This plant is the annatto plant extract obtained from the achiote tree, which grows in tropical regions such as Brazil and Mexico.

Annatto is mostly used to give foods an orange and yellow color. It does not change the aroma, structure, or taste of the cheese. Looking at today, while New England producers prefer white Cheddar, most producers, including our country, prefer it to be orange in color.
