Ordu's anchovy-based 'içli tava' receives geographical indication registration

The application made by the Ordu Metropolitan Municipality to the Turkish Patent and Trademark Office for 'Ordu içli tava'—a dish made from anchovies in the Black Sea region that is frequently preferred by both domestic and international tourists—has been accepted.

Following the initiatives of the Metropolitan Municipality's Department of Agricultural and Livestock Services, the dish was registered as a product with a geographical indication, as published in the Official Geographical Indication and Traditional Product Name Bulletin of the Turkish Patent and Trademark Office, dated August 15, 2023, and numbered 155.

NUMBER OF REGISTERED PRODUCTS RISES TO 16

With the geographical indication registration of Ordu içli tava, the number of products with geographical indication registration across the province has risen to 16. Previously, Kabataş halva, Ordu Perşembe walnut halva, Ordu highland beet (Dürme) pickle, Akkuş sugar bean, Gürgentepe shepherd's bean, Ordu kiwi, Ordu toast, Yalıköy meatball, Ordu cherry laurel pickle, Ordu butcher's broom (sakarca) muhammara, Ordu greenbrier (melocan) sauté, Ordu common comfrey (galdirik) sauté, Mesudiye dry bread/Mesudiye ğoliti, Ordu pita/Ordu oily bread, and Ordu hazelnut twisted dessert had been registered.

HOW IS ORDU İÇLİ TAVA PREPARED?

Ordu içli tava is a local dish unique to the province of Ordu, prepared by arranging cleaned and deboned anchovies to cover the surface of a pan, adding a prepared rice stuffing on top, covering it with more anchovies, and cooking it.

The rice stuffing is made using rice, onions, raisins or currants, pine nuts, parsley, black pepper, red pepper flakes, and salt. Large-sized anchovies (at least 9 cm) caught off the coast of Ordu are used in the preparation of içli tava.
