Vegetable couscous, which contains 182 calories per 100 grams, is among the most practical foods to prepare.
Recipe for Vegetable Couscous;
Vegetable Couscous Ingredients:
(I used the vegetables I had in my fridge; you can use any vegetables you desire)
• Zucchini
• Potato
• Red Onion
• Capia Pepper
• 2 tbsp Vegetable Oil
• 1 cup Couscous
• 1 tbsp Butter
For the topping; 1 cup yogurt and 1-2 cloves of grated garlic
(You can add any spices you desire to the vegetables)
Vegetable Couscous Preparation:
-We start by making our couscous pilaf. We put the butter in the pot and lightly sauté the couscous for 4-5 minutes. We add 1 cup of hot water, the same amount as the couscous. We stir a little more and leave it to cook on low heat with the lid closed. (You can think of it like rice pilaf)
-Meanwhile, we chop whatever vegetables we have in our fridge or the vegetables we desire into large cubes, add the vegetable oil and spices in a large bowl, and mix well. Then we send them to the air fryer. I cooked them in the french fry mode. (You can also cook them in a regular oven)
-During this time, we take the couscous that has absorbed its water off the stove, place a paper towel over it, and leave it to steam with the lid closed.
-Once the vegetables are cooked, we bring the couscous and vegetables together as shown in the video.
-We drizzle our garlic yogurt over it and enjoy.
