Minestrone is among Italy's famous soup varieties, typically made with vegetables and the addition of pasta or rice, and sometimes both.
Today, although there is no single specific recipe for this soup and every region has its own unique version, the most common ingredients are broth, onions, tomatoes, celery, carrots, and legumes.
HOW IS MINESTRONE PREPARED?
- Vegetables are chopped and cooked for a long time, but they should not become mushy.
- Finally, pasta or rice can be added to complete this inexpensive yet hearty dish.
- Depending on the cooking method, these delicious soups are divided into two main categories: minestrone a crudo (with raw vegetables) and minestrone col soffritto (with sautéed vegetables).
- For crudo, raw vegetables are used and garlic-flavored olive oil is usually added towards the end of cooking; soffritto is made with vegetables that are first sautéed in butter, vegetable oil, or lard, along with pancetta (bacon) and pork.
A perfect comfort food to warm up a cold day, vegetable soup is even better when made in advance and served reheated, as it takes some time for the flavors to meld and deepen.
