Muhallebi is a creamy Arab dessert that is in many ways similar to the French blancmange. Legends trace the origin of the dessert back to the Sasanian Empire.
Muhallebi is made with a mixture of milk and sugar, thickened by cooking with cornstarch, and is usually flavored with orange blossom or rose water.
While hot, it is distributed into smaller molds, left to cool, and then served cold.
This simple and satisfying dessert is eaten in slightly different ways across the Arabian Peninsula, the Middle East, and North Africa. Depending on the region, it can be garnished with typical local ingredients such as pistachios, almonds, shredded coconut, cinnamon, or raisins.
It is one of the most popular desserts served during the month of Ramadan in many countries and regions, but it is also regularly served as a light restaurant dessert.
MUHALLEBI INGREDIENTS
- Ingredients Required for Muhallebi / Serves 4
- 440 g milk
- 40 g sugar
- 60 g rice flour
- A pinch of salt, 1-2 grams
- 3-4 g orange blossom water
- Cinnamon
- Pistachios or almonds
HOW TO MAKE MUHALLEBI?
- Whisk the milk, sugar, rice flour, and salt until dissolved, then pour the mixture into a small saucepan.
- Place over medium heat and stir constantly until it begins to boil. At this point, adjust the heat to medium-low, then continue to stir constantly until the mixture thickens enough to coat the back of a spoon.
- Remove the saucepan from the heat and add the orange blossom water.
- Pour into separate bowls, cover with plastic wrap, and store in the refrigerator until it is time to serve.
- When ready to serve, sprinkle with cinnamon and garnish with crushed almonds or pistachios.
