The Kanlıca mushroom is an edible species belonging to the Russulaceae family. There are three different types of this mushroom in Turkey, known by their Latin names Lactarius Salmonicolor, Lactarius Deliciosus, and Lactarius Deterrimus; however, they are generally known as Kanlıca mushrooms in our country.

This mushroom species contains a high amount of amino acids. Since amino acids are important for the body's protein balance, the Kanlıca mushroom can be a valuable source of protein, especially for those who follow a vegetarian diet. The Kanlıca mushroom also contains minerals such as calcium, phosphorus, iron, sodium, potassium, and magnesium, as well as vitamins B1, B2, and C. For this reason, it is considered a highly nutritious food source.

This mushroom species generally grows in pine forests and appears in the late autumn, towards winter, following heavy rainfall. It is found in various regions of our country, particularly in the western Black Sea and western Aegean regions, and is usually harvested and consumed between September and October. During this period, it is collected by villagers and has become a source of livelihood.
