What is yeast extract and where is it used?

What is yeast extract and where is it used?

The primary ingredient of yeast extract is fresh yeast, which we know very well as it is also used in bread, beer, and wine making. Yeast extract is obtained by breaking down yeast cells. In this process, enzymes are released and the cell wall is destroyed.

What remains are the natural components that make up yeast cells, such as proteins, amino acids, carbohydrates, vitamins, and minerals.

The reason yeast extract is used in so many places is, of course, its appeal to the palate. Yeast extract, which has a flavor similar to homemade meat bouillon, carries the umami characteristic—also defined as the fifth taste—which intensifies the flavor of the dish it is added to.

Among the substances contained in yeast extract listed above, it is the proteins and amino acids that give it its indispensable taste. However, because its flavor is quite intense, it is used in very small amounts. The ratio of yeast extract in many products is below 1%.

WHAT ARE ITS BENEFITS?

According to the Food and Agriculture Organization (FAO), the protein quality of yeast extract has reference values similar to those of eggs or milk. This means that yeast extract contains all the essential amino acids required for human nutrition in a highly absorbable form. In addition to proteins, yeast extract is also rich in B vitamins, fiber, and minerals.

Compared to soy-based plant proteins, it is more advantageous in terms of allergenic properties. To put it clearly, it has no known allergic effects.

Although the flavor of yeast extract resembles meat bouillon, it does not contain any meat products. For this reason, it stands out as an ideal product for those following vegan and vegetarian diets.

Since it enhances the existing flavor of dishes, it reduces the need for salt. In this respect, it can also be preferred in low-salt diets.

WHAT GIVES YEAST EXTRACT ITS FLAVOR...

What gives yeast extract its umami flavor is the glutamate it contains. However, it has no connection to Monosodium Glutamate, which is an additive also known as MSG. Glutamate is a component naturally found in many fresh products such as tomatoes, peas, and mushrooms.

Our body also produces glutamate independently of what we eat; for example, glutamate is found in saliva and even in breast milk.

The main reason yeast extract and MSG are confused is their glutamate content. In yeast extract, which is a completely natural product, the glutamate content is around 5%, which is only one-fifth of the glutamate found in, for example, parmesan cheese. MSG, on the other hand, consists of 100% glutamate. Unlike yeast extract, MSG does not have a distinct taste of its own; it only enhances the existing taste of the product it is added to.
