How to make sour meatballs (ekşili köfte)?

Sour meatballs are a dish that adds color to our tables with its flavor, being both practical and filling. In this recipe, you will discover how to easily make this traditional dish at home, which leaves a mark on the palate with its sour and aromatic taste.

INGREDIENTS

350 grams ground meat

Quarter cup of rice

1 onion

1 egg

Salt

Black pepper

Flour

Olive oil

2 carrots

1 celery root

2 potatoes

7 cups hot water

For the thickening sauce (terbiye)

1 egg

Juice of 1 lemon

PREPARATION

Soak the rice in hot water for about 5-10 minutes to soften.

Drain and let it cool.

Meanwhile, grate the onion.

Knead the cooled rice well with the onion, ground meat, salt, black pepper, and egg.

Spread flour on a large tray so that it covers the entire surface.

Take pieces of the meat mixture larger than a hazelnut but smaller than a walnut, roll them in your hands, and place them on the tray.

After turning all the ingredients into balls, shake the tray to ensure the meatballs are coated with flour on all sides.

Dice the carrots, potatoes, and celery root, place them in separate bowls, and set aside.

Place the olive oil in a pot and start heating it.

Once the oil is hot, add the carrots to the pot and sauté for 1 minute.

Add the hot water and wait for it to boil.

When the water boils, add the meatballs, potatoes, and celery root to the pot, cover it, and cook over medium heat for 20 minutes.

Once the potatoes and carrots are tender, turn off the heat and wait for it to cool slightly.

For the thickening sauce, whisk the lemon juice and egg.

Add some of the warm meatball broth to the sauce to temper it; otherwise, the egg might curdle when you add it to the pot.

Mix all the ingredients together and serve hot.
