On the other hand, there are some tips to keep in mind when making tomato paste. Expert Dietitian Betül Merd highlights important points for making healthy tomato paste at home.

BENEFITS OF HOMEMADE TOMATO PASTE

Tomato paste is an important food source used all over the world and an indispensable part of kitchens for flavoring dishes. Merd points out that while canned tomato paste with a long shelf life sold in markets provides practicality in terms of time, tomato paste made at home in accordance with sterilization rules is healthier. Homemade tomato paste stands out with both its flavor and its health benefits. Tomatoes and peppers are vegetables rich in vitamins A and C as well as minerals. For this reason, tomato paste contains antioxidants that fight free radicals. In addition, the fiber content of tomato paste helps the digestive system.

Merd provides the following information regarding the storage conditions of tomato paste:

'Exposure of tomato paste to oxygen can cause it to spoil rapidly, leading to changes in its color, taste, and texture. Proper storage of tomato paste is important because the consumption of spoiled food poses a vital danger. Effective methods must be used to prevent poisoning. Proper packaging, antioxidants, and protection from light are the best ways to prevent tomato paste from spoiling. For homemade tomato paste to be long-lasting and high-quality, it must be placed in jars and stored. If the effects of factors such as light exposure, temperature fluctuations, and air exposure can be reduced through effective storage conditions, the shelf life of the tomato paste will also be extended.'

'The pH level and stability of tomato paste play an important role in its shelf life. Tomatoes are naturally acidic, and the pH of the paste can affect its susceptibility to spoilage. Furthermore, the addition of additives and antioxidants helps control oxidation and preserve the quality of the tomato paste.'

'The right containers should be chosen for tomato paste. Jars should be made of glass and their lids should be airtight. The right containers will preserve the flavor and prevent unwanted chemicals from affecting the tomato paste.'

'Before using the jars, it must be ensured that they are properly sterilized. Jars should be boiled in hot water for a few minutes or washed in a dishwasher at a high temperature without detergent.'
