HOW IS MULBERRY MOLASSES MADE?
- To ensure the right consistency, mulberries are collected after they have ripened; four people hold the corners of a cloth called a 'hasavan' under the tree, and the mulberries are shaken from the branches onto the cloth before being placed into cauldrons.
- Enough water is added to the cauldron to cover the collected mulberries, and they are boiled until the fruit separates from the seeds. The boiling mulberry molasses is then strained and left to rest.
- After resting, the mulberry molasses is placed back into the cauldron and boiled again. The boiled mulberry molasses is then transferred to wide-bottomed containers and left in the sun for a few days. After being sun-dried, it is strained once more and placed into containers for storage.
- There are two varieties of the mulberry fruit: white mulberry and black mulberry. The mulberry fruit strengthens bones, protects the heart, and is also a beneficial fruit due to its diuretic effect.
- Mulberry is also a highly nutritious fruit and a good source of antioxidants. Produced from the mulberry fruit, it can be made into mulberry molasses, mulberry syrup, and mulberry fruit leather, all of which can be consumed in a delicious way.
- Since mulberry molasses has a thick consistency by nature, it can be difficult to consume on its own, so it can also be consumed by mixing it with tahini.
- Those with anemia or low blood sugar can consume 2 tablespoons of mulberry molasses on an empty stomach in the morning. You can also consume mulberry molasses by adding it to drinks such as tea or milk.
- Additionally, you can add this mulberry molasses instead of sugar to some desserts.
