HISTORY OF FAJITA

Fajita is a meat dish of Tex-Mex-American origin. Cutting beef steak into thin strips is the most common method used.

The word fajita was recorded by the Oxford dictionary in 1971.

The word 'faja' means strip or belt in Spanish. Although early fajitas only used beef cut into thin strips, today the dish has diversified to include green, yellow, and red peppers, onions, and chili peppers.

FAJITA RECIPE

  • 300 g beef steak
  • 300 g chicken meat
  • California bell peppers (yellow, red, green)
  • 2 medium-sized onions
  • Vegetable oil
  • 3 cloves of garlic
  • 2-3 tablespoons of vinegar
  • Red pepper flakes
  • Thyme
  • Tortilla (flatbread)

HOW TO MAKE FAJITA?

  • Season the steak and chicken meat, which you have had thinned at the butcher, with salt and pepper.
  • Peel and finely chop the garlic.
  • Place the chopped meat in a large bowl, add the minced garlic, vinegar, all the spices, and 1 tea glass of vegetable oil, and marinate for about 2 hours.
  • Remove the seeds from the peppers and chop them along with the onions.
  • Put 2 tablespoons of vegetable oil in a large pan and lightly sauté the peppers and onions.
  • Remove from the heat while the vegetables are still slightly crisp, before they are fully cooked.
  • Cook the marinated meat on both sides in a preheated cast-iron skillet.
  • Place the sautéed vegetables on 2 serving plates. Slice the cooked meat into julienne strips and arrange them over the vegetables.
  • Warm the tortillas and serve very hot with salsa, sour cream, and guacamole as desired.
