Farmers in Iceland have stated that cucumber sales have doubled and they are struggling to meet the rising demand because recipes featuring cucumber as the main ingredient have become a trend on TikTok.

The spread of a salad recipe on TikTok, in which social media influencers use finely grated cucumber seasoned with sesame oil, garlic, rice vinegar, and chili oil, has put Icelandic farmers in a difficult position.

In a statement to the BBC from the "Gardeners' Sales Company," also known as Iceland's farmers' union, it was noted that farmers in the country are unable to keep up with the increasing consumer demand due to the sudden popularity of the recipe.

The statement mentioned that approximately 2 thousand tons of cucumbers are produced in the country annually, and that not only the TikTok trend but also children returning from summer vacation and the fact that production is not yet sufficient have contributed to the "cucumber shortage."

The statement, which noted that cucumber-based recipes are very popular in the country, also recorded that other ingredients used in the recipe are being sold in high volumes.

Hagkaup, a supermarket chain in Iceland, also pointed out that cucumber sales have increased by more than double.
