Paella, which is unique to Spanish cuisine, is a type of rice dish. Depending on the region, it contains various seafood as well as chicken, game meat, sujuk, or sausage.

Having managed to become a staple on tables around the world, paella is also quite practical to prepare.

PAELLA INGREDIENTS

  • 2 medium-sized onions
  • 4 cloves of garlic
  • 2 medium-sized tomatoes, fleshy and juicy
  • 5 tbsp olive oil
  • 200 g jumbo shrimp
  • 200 g mussel meat
  • 200 g cleaned squid
  • 3 baby octopuses
  • 1 tea glass of white wine
  • 1 g saffron
  • 1.5 cups of rice, short-grain rice (preferably Senia, Bomba, or Bafha varieties)
  • 3 cups of water, preferably fish or vegetable stock
  • 1 tsp salt
  • 1 tea glass of peas
  • 1/2 tsp freshly ground black pepper
  • 1/4 bunch of parsley

PAELLA PREPARATION

  • Chop the onions into small pieces suitable for cooking. After crushing the garlic, peel the tomatoes and cut them into small cubes.
  • Clean and wash the seafood.
  • Heat the fish or vegetable stock over low heat.
  • Heat a portion of the olive oil over low heat. Add the onions and garlic and sauté.
  • Wash the rice you will use with plenty of water, drain it, and add it to the pan.
  • Add the cubed tomatoes and sauté.
  • Add the white wine and saffron, and let the liquid evaporate. Add half of the hot water, along with the salt and freshly ground black pepper, and leave to cook.
  • In a separate pan, heat the olive oil and add the seafood to cook.
  • Add the cooked seafood, peas, and the remaining hot water to the rice pot.
  • Cook all the ingredients over low heat.
  • Once the dish has absorbed its liquid and rested, garnish with chopped parsley to finish the recipe.
