ANCHOVY INGREDIENTS

-550 g sardines

-2 lemons

-1 cup pickling salt

Sauce ingredients:

-Olive oil

-4 cloves of garlic

-1 tea glass of vinegar

-1 tea glass of apple-grape vinegar mixture

-1/2 lemon- 1 slice sliced, the rest juiced

-1 dried hot chili pepper

-1 teaspoon whole black pepper

-3 bay leaves

-2 slices of fresh ginger- thinly sliced

-4 juniper berries- crushed

-4 cloves

PREPARATION OF ANCHOVY

First, the sardines are cleaned. The remaining bones on the sides are pulled out with the help of tweezers.
The sardines placed in a bowl are filled with water until they are covered, and they are left until the water becomes clear.
Mix the lemon juice and salt, and let the fish sit in the mixture you prepared for about 30-40 minutes.
Wash the anchovies that have hardened in salt in plenty of water. Mix the spices, the juice of half a lemon, and the vinegar, and drizzle with olive oil.
Arrange the dried fish in a jar and pour the sauce and olive oil over them. Let it sit for about a week.
