HOW TO MAKE WINTER TOMATO SAUCE?
Before you start making tomato sauce, the very first step is to sterilize the jars you will use. Because non-sterilized jars shorten the shelf life of the sauces. Therefore, you can start by boiling the jars and their lids in hot water.
You can buy any variety of tomatoes you like. However, we can say that plum tomatoes or field tomatoes are preferred for making sauce.
After washing the tomatoes one by one, you can peel them or proceed to the preparation stages without peeling; the choice is yours.
First, cut the tomatoes into two pieces. At this stage, if there are any rotten parts, be sure to cut those parts off. You can chop the tomatoes you cut into two pieces into large chunks or grate them.

Place the grated tomatoes into a pot. Add 1 teaspoon of salt for every 1 kg of tomatoes. You can adjust this ratio according to your taste.
Then, cook the tomatoes over medium heat for 15-20 minutes. You can ensure the consistency thickens by stirring occasionally to prevent them from burning.
At this stage, you can add ingredients like minced garlic and thyme to add flavor. Also, one cube of sugar will make the sauce more aromatic.
When the consistency of the sauce has thickened well, remove it from the heat. If you did not grate the tomatoes, you can thicken the consistency by running them through a blender after cooking.

Distribute the tomato sauce into jars while it is still hot and drizzle a tablespoon of olive oil over them. After closing the lids tightly, turn them upside down and leave them to cool at room temperature. When they have cooled down completely, your tomato sauces are ready.
You can store the winter tomato sauce you have prepared for a long time in a cool and dry place, in a pantry, or in the refrigerator.
Winter tomato sauce preserves should be stored in an environment away from sunlight at room temperature. Once the jars are opened, they should be kept in the refrigerator and consumed within two days.
You can use the sauces you have prepared in all dishes where you use tomatoes.
