There are traditions that have been going on for years regarding how to make the best coffee. A group of scientists who do not accept these or want to reach something 'better' say they have discovered the perfect espresso method. This secret actually lies in the grinding process.

In a study published in the journal Matter, researchers at the University of Oregon discovered that a small amount of water added to coffee beans before grinding makes the coffee more consistent and flavorful.

The researchers, who lifted the veil of secrecy here, believe that baristas and industrial coffee chains can make a difference by starting to apply this simple method. When coffee is ground, there is friction between the beans, which creates electricity and causes particles to clump together in the grinder. The research revealed that adding water to this process reduces the electricity produced, resulting in less coffee waste and stronger flavors.

It was also discovered that there are changes in the way espresso is brewed when combining water with different grinding methods.

According to Christopher Hendon, an associate professor of chemistry at the University of Oregon, "Water not only reduces static electricity, but it also reduces the mess created during grinding. It can also have an effect on the density of the coffee."

In this study, which also investigated how electricity affects coffee taste, it was found that this electrification occurring in coffee beans has an effect similar to volcanic eruptions. Simply taking the beans, grinding them, and turning them into powder is compared to this process.

The research, which addressed the origin of the coffee, the roast level, and many other variables, revealed that they were not affected by the amount of electricity produced.

Hendon says: "We now know which grind settings to use to make espresso. We can try to understand which factors play a role in coffee taste in a sensory sense."
